Banana And Nut Muffins




One thing I love to do every now and again is baking. I like to find really nice recipes and make them to my own liking. Today I am going to show you how to make my favourite banana and nut muffins, I also love this recipe because you can also make it gluten free and it still tastes lovely! You can also swap the nuts for any other topping you may like, I once put on little fudge pieces which were a lovely alternative. They are super easy to make and are really nice.


Ingredients (makes 10-12 ish)
- 100g (4oz) butter or margarine
- 100g (4oz) soft light brown sugar
- 2 eggs
- 2 bananas
- 100g (4oz) self-raising flour
- 1 teaspoon of baking powder
- 100g (4oz) chopped nuts/any alternative

You will also need a muffin tray


Instructions
1. Turn on your oven to 190°C, 375°F, Gas mark 5.
2. Put the butter or the margarine into a mixing bowl then add sugar.
3. Use a wooden spoon to beat the butter or margarine and the sugar until they are smooth and creamy.
4. Carefully break the eggs into a small bowl. Beat them with a whisk or a fork until they are mixed well.
5. Add the beaten egg to the creamy mixture. Each time you add some egg, beat it into the mixture.
6. Peel the bananas. Cut them into chunks then put them in a bowl. Mash them well with the back of a fork.
7. Stir the mashed banana into the creamy mixture. Then put a sieve over the bowl and sift the flour and baking powder into it.
8. Using a metal spoon to stir the flour into the mixture. To do this turn the mixture over slowly with the spoon.
9. Spoon the mixture into each case just below the top of the case. Sprinkle the chopped nuts on top of each muffin and bake for about 25-30 minutes.
10. Once you take out the muffins check if they are baked properly by getting a tooth pick and putting it through the center of the muffin. If it comes out with mixture on it its not done but if its clean then its baked thoroughly.
11.  Leave it on a wire rack for about 20 minutes.


And your done! If you want to make this gluten free just swap the flour and the baking powder for gluten free alternatives (you can find these in any supermarkets).
